As Toshiki explains, Chef Takashi's mastery was in taking a few simple ingredients and creating something extraordinary. "Everyone uses the same ingredients, but only a few people can make them really shine. Chef Takashi was one of those people," Yamada reflects, recalling how the chef’s influence shaped the restaurant in its early years.
Slurping Turtle chose to solidify its identity as a consistent, go-to spot for college students and alumni. "We wanted to offer a stable menu, especially with a clientele that's always changing every four years. Students come back for homecoming, and they want the same dishes they loved in college," Yamada notes. This consistency is part of what makes Slurping Turtle a nostalgic destination for graduates who return to Ann Arbor.
Signature Dishes That Keep Guests Coming Back
While the restaurant is known for its ramen, the menu offers much more, and certain dishes have developed a cult following. "Our Duck Fat Fried Chicken (DFFC) is hands-down one of our most popular items," Yamada shares. Initially a sleeper hit, the dish has now become a star on the menu, often served alongside their famous ramen bowls. In fact, the DFFC Miso Ramen—a blend of two popular broths, the Tantanman and Tonkotsu—is the most popular ramen on the menu. "It’s a perfect mix of nuttiness, saltiness, and richness. Plus, when you add that fried chicken on top, people go crazy for it."
When asked about his personal favorite, Yamada doesn't hesitate: "The Hakata Tonkotsu is my go-to. It’s our baseline ramen, and it’s pretty close to the real deal. Authentic ramen is tough to replicate across the ocean, but we’ve come really close."
Slurping Turtle’s sushi bar is another highlight that Yamada is particularly proud of. Their specialty nigiri, featuring premium cuts like the belly of salmon and yellowtail, showcases the expertise of their executive chef, Tadashi, who brings over 30 years of sushi experience to the table. “The best way to sell a menu item is if you love it yourself,” Yamada says. “We love our sushi, and it shows.”

Yamada also highlights the fun and inviting atmosphere that Slurping Turtle aims to create. “We have regulars who bring their pet turtles in and even feed them some ramen noodles! It’s those kinds of quirky, personal connections that make the restaurant special.”
Looking to the Future
Slurping Turtle has already established a strong presence with two locations, one in Columbus and another in Ann Arbor, but they’re not stopping there. Yamada says the brand plans to expand. "We see huge potential in college towns, especially with how diverse the populations are. There are so many people who are new to ramen, or who already love it, and that’s exactly who we want to serve."
Despite the challenges of the pandemic, the Slurping Turtle team is optimistic about their growth. “We’re aiming for five new locations in the next five to eight years,” Yamada shares, excited for what’s ahead. With the restaurant’s ability to balance tradition with innovation, it’s clear that Slurping Turtle has a bright future ahead.
