For over 45 years, Jing Fong has been a cornerstone of New York City’s Chinatown dining scene. Known for its authentic dim sum and rich history, this family-run restaurant has served generations of locals and visitors alike. Today, Jing Fong operates from its cozy location at 202 Centre Street, continuing its legacy of bringing people together through delicious food and warm hospitality. At the helm is Truman Lam, who is balancing tradition with modern dining trends to ensure Jing Fong thrives in a changing world.

From Humble Beginnings to a Chinatown Icon

Jing Fong’s story began in the late 1970s when Truman Lam’s grandfather––Shui Ling Lam, a plumber by trade–– became involved in the restaurant. Over time, he acquired majority ownership, transforming it into one of the most beloved restaurants in New York City Chinatown.

Originally located on Elizabeth Street, the restaurant grew to a massive 1,000-seat banquet hall, hosting everything from dim sum brunches to grand weddings. However, the pandemic forced Jing Fong to adapt, leading to a move to its current Centre Street location in 2021. The new space, with approximately 100 seats, offers a more intimate dining experience while still serving the same beloved dishes.

“Now, we’re more of a traditional restaurant that focuses on breakfast, lunch, and dinner,” Truman explains. “We still host events, but on a much smaller scale.”

Dim Sum Favorites You Have to Try

Jing Fong is synonymous with dim sum, and Truman has some must-try recommendations for first-time visitors. “The BBQ pork buns are always a hit, along with the rice noodles, shumai, and shrimp dumplings,” he shares. For dessert lovers, the egg tarts are a classic choice. Traditional dim sum carts are still part of the experience at Jing Fong.

How Jing Fong Is Evolving

Jing Fong has embraced new challenges while staying true to its roots. The restaurant expanded its delivery services even before the pandemic, partnering with platforms to reach a broader audience. Today, delivery, corporate catering, and private events are key components of their business.

“More people are requesting off-site catering for events like weddings and rehearsal dinners,” says Truman. “They want traditional banquet-style food but in modern settings.”

The menu has also been updated to adapt to customer needs. While the dim sum selection has been slightly condensed, Jing Fong still offers all the staples its loyal patrons expect.

Truman Lam: Hands-On Leadership

Truman Lam’s role at Jing Fong goes beyond management. From handling payroll to personally delivering catering orders, he’s involved in every aspect of the business.

“I even help out in the dim sum kitchen sometimes,” Truman admits. “I enjoy wrapping dumplings and connecting with the team.”

Looking to the Future

While Jing Fong is focused on stability in today’s challenging restaurant environment, Truman remains open to opportunities. “Right now, it’s about surviving and adapting,” he says. “Expansion isn’t in the cards yet, but we’re optimistic about the future.”

For aspiring restaurateurs, Truman offers some candid advice: “You have to really love the restaurant business. It’s not just about cooking—it’s a challenging industry, and you need to be ready for everything it demands.”
