From her early days in Bangkok, where she learned the art of dumpling-making from her mother, to her current role as the visionary behind Dumpling n Dips in New York City, Bella's culinary journey is a testament to passion and perseverance. Her restaurant has become a haven for those seeking authentic Thai flavors wrapped in delicate dumplings.
Bella’s love for food was ignited in her childhood kitchen in Bangkok. Her mother, an excellent cook, made dumpling-making a family affair. "In Bangkok, dumplings were a way for my mom to bring us together as a family. She’d say, ‘Come help me cook,’ instead of letting us play games," Bella recalls with a smile. These formative years didn’t just teach her how to wrap dumplings—they also nurtured her passion for authentic Thai cuisine and her desire to share it with others.
A Vision Born in Adversity
The pandemic brought unprecedented challenges to Bella’s career as she managed a large-scale restaurant. Facing labor shortages and shifting customer demands, she reimagined what a restaurant could be. "I wanted something smaller, more intimate—easy to expand and manage," Bella explains. This vision took shape as Dumpling n Dips, a cozy eatery offering bold Thai flavors in bite-sized packages.
With a background in food science, Bella combined her technical knowledge and cultural heritage to craft a menu that’s as innovative as it is nostalgic. Her Tom Yum Dumplings and Lobster Dumplings are standout dishes, showcasing her ability to reimagine traditional Thai dishes in dumpling form. "I wanted to make something people hadn’t tried before, like dumplings inspired by classic Thai dishes," she says.
A Menu for Everyone
Dumpling n Dips is built on inclusivity. Bella designed her menu to accommodate various dietary preferences, offering options like traditional, vegetarian, and vegan dumplings. "I wanted everyone to feel welcome—whether you eat meat, fish, or are vegan," Bella shares. This thoughtful approach has drawn a diverse customer base, with patrons traveling from across the country—and even overseas—to experience her unique creations.
Bella’s dedication extends beyond the kitchen. She is present at her restaurant almost daily, personally interacting with customers to gather feedback. "I talk to customers, serve them, and even sit down with them sometimes," she says. "It’s the best way to understand what they like and how I can improve."
Looking to the Future
As Dumpling n Dips thrives in the vibrant culinary scene of New York City, Bella is already exploring new horizons. Seasonal offerings like Lobster Dumplings keep the menu dynamic, and she’s considering expanding into frozen products for retail. "Customers often ask if they can take dumplings home or ship them to other countries," Bella says. While still in development, this venture could bring her innovative flavors to an even wider audience.
For Bella, the recipe for success combines passion and a willingness to learn from her customers. "You have to love what you do, but also listen to the people who eat your food. Spending time with them and hearing their feedback is so important," she advises aspiring restaurateurs.
Lessons Learned and Advice for Aspiring Restaurateurs
For Bella, success comes from truly understanding her customers. “You might think a dish is perfect, but if your customers don’t agree, you need to adjust,” she explains. This approach has kept Dumpling n Dips thriving in an ever-changing restaurant landscape.
Her advice to aspiring restaurateurs? “Be willing to roll with the punches. Unexpected challenges will come your way, and ego has no place in the kitchen.”
