We sat down with the team behind Pretzel Bell and learned how they’ve revived iconic traditions, crafted a menu focused on fresh, locally sourced ingredients, and created a welcoming space for Michigan fans and locals.

In a city that cherishes its iconic traditions, Pretzel Bell has made a triumphant return to Ann Arbor. Originally opened in 1934, this beloved establishment was a central hub for students and locals alike until it closed its doors in the 1980s. Fast forward to 2016, and a group of University of Michigan alumni brought Pretzel Bell back to life, infusing the restaurant with both old-school charm and a fresh, modern dining experience.

We recently sat down with Pretzel Bell’s team to learn more about the history, the resurgence of the brand, and what makes it a must-visit spot for both nostalgic locals and first-time visitors.

Reviving a Legend

When the opportunity to bring back Pretzel Bell arose, the group of owners, all U of M alumni, couldn’t resist the chance to restore a piece of Ann Arbor’s history. “It was important to us to hold onto the nostalgia of the original Pretzel Bell while also creating something that feels fresh and relevant,” shared Joanna, one of the key figures behind the restaurant’s revival.

From the start, they wanted to honor the history of the original Pretzel Bell, incorporating memorabilia and traditions into the modern iteration. The owners brought back the bell-ringing tradition for 21st birthdays, a hallmark of the original location. A newer tradition, giving a free pretzel to U of M alumni when they visit, has become a fun nod to the school's ties with the restaurant and its namesake.

A Nod to the Past

The team at Pretzel Bell has gone above and beyond to create an atmosphere that pays homage to the restaurant’s roots. Guests are encouraged to carve their names into the wooden tables—just as they did decades ago—and the walls are adorned with memorabilia from University of Michigan’s rich history. Much of this decor comes directly from U of M’s archives, creating a nostalgic atmosphere for those who frequented the original location.

“I love that we’ve been able to keep that tradition alive,” said Joanna. “It’s not just about the food, it’s about creating a space where people feel connected to Ann Arbor’s history.”

What’s on the Menu?

Although pretzels weren’t part of the original Pretzel Bell menu, they’ve since been added due to popular demand. “It’s funny, because the original Pretzel Bell didn’t even serve pretzels, but it became something people expected,” Joanna laughed. Today, Pretzel Bell’s pretzels are a fan favorite, but they’re not the only thing drawing crowds.

The menu, which Joanna describes as “country club meets casual comfort,” features standout items like the Varsity Burger, made with high-quality ground Wagyu beef, smoked Gouda, and their signature pretzel bun. It’s their number one seller week after week. For seafood lovers, the fish and chips are a must-try, with a house-made beer batter and tartar sauce.

“We really focus on sourcing local ingredients as much as possible,” said Joanna. “Our salmon comes from a farm in Jackson, Michigan, and we use Guernsey dairy for many of our dishes. Everything is scratch-made with the highest quality ingredients.”

Cheers to Tradition

Drinks at Pretzel Bell are as thoughtfully crafted as the food. Their signature Pretzel Bell Pilsner, brewed exclusively by North Peak Brewing Company, is a staple, along with their Hail Pale Ale, which gives a nod to Michigan pride. For those looking for a surprise, the $3.50 Mystery Beer has become a favorite among students.

“We love being able to offer something fun and unexpected,” Joanna said. “And for those who aren’t beer drinkers, our cocktails and happy hour specials offer plenty of options.”

Events and Community Connection

Pretzel Bell has become a hub not just for dining, but for community events. From trivia nights in the downstairs bar to country dance lessons on Thursdays, there’s always something happening. They also offer happy hour specials every day, making it a popular spot for students and locals.

One of the highlights this football season will be the Blue by 90 tailgates—Friday night events that bring together Michigan sports fans for food, drinks, and community. “We really aim to create an inclusive space where everyone feels welcome,” Joanna shared. “Whether you’re here with your parents, friends, or on your own, there’s something for everyone at Pretzel Bell.” The event is named after Blue by 90, a popular Michigan sports podcast and media group, and it creates a fan-focused environment perfect for gearing up for game day.

Looking Ahead

As Pretzel Bell continues to grow, the team is excited about the future. With plans to host even more events and keep their menu fresh, there’s no doubt that Pretzel Bell will remain a beloved part of Ann Arbor’s dining scene for years to come.

For those considering a career in the restaurant industry, Joanna offers a bit of advice: “Don’t be afraid to try something new and unique. The restaurant industry can seem intimidating, but it’s also one of the most rewarding industries to be part of.”
