“It’s not buffet,” the owner explained. “You order, we make it fresh. That’s healthier, better. But sometimes people order too much and waste food. That’s our big challenge.”

While there are house rules to discourage waste, the team is cautious not to enforce penalties too harshly. “If we charge for leftover food, some people get unhappy. We want customers to come back.”
